Rhubarb & Coconut Sports Bars

Sports bars can be a very useful part of your diet if you take part in prolonged exercise. However, many of the shop bought ones can be expensive and also tend to be quite dry. This recipe uses fresh rhubarb to make deliciously soft bars to give you the energy you need for your sport.

Ingredients

For The Rhubarb Centre:

  • 300g Rhubarb
  • 115g Brown Sugar
  • 3 Tbsp Water
  • 1 Tsp Lemon Juice
  • 4 Tsp Cornflour

For The Crumble:

  • 100g Oats
  • 115g Brown Sugar
  • 90g Plain Flour
  • 50g Desiccated Coconut
  • 1/2 Tsp Salt
  • 75g Melted Butter

Method

  • Step 1: In a large saucepan, add the rhubarb, brown sugar, water and lemon juice. Bring to the boil then reduce the heat to medium. Cook for around 5 minutes or until the rhubarb is tender, stirring frequently.
  • Step 2: Slowly mix the cornflour into the rhubarb mixture. Bring to a boil, cook for around 2 minutes, stirring frequently until thickened. Set aside to cool completely.
  • Step 3: In a large bowl, mix together the oats, flour, coconut, salt and brown sugar. Stir in the butter and mix until crumbly.
  • Step 4: In a greased 8 inch squared baking dish, press down half of the crumble mixture. Top with the rhubarb then cover with the remaining crumble, pressing down lightly.
  • Step 5: Bake in a preheated oven at 175C fan for around 30minutes or until golden brown. Cool on a wire rack then cut into squares.
