Chicken & Chorizo Jambalaya
Ingredients
- 2 Chicken Breasts, chopped
- 1 tbsp.olive oil
- 1 onion, diced
- 1 red pepper, chopped
- 90g white mushrooms, sliced
- 2 garlic cloves, crushed
- 80g chorizo, sliced
- 250g whole grain rice
- 400g tin chopped tomatoes
- 350ml chicken stock
- 1/2 tsp dried thyme
- 1 tsp paprika
- 1/4 tsp salt
- 1/2 tsp pepper
- 1 tbsp. oregano
- 1 tsp cayenne pepper
- Juice of 1/2 a lime
Method
Step 1: In a large frying pan, heat the oil then add the chicken and cook until golden. Remove from the pan and set aside.
Step 2: Add the onion and cook for a few minutes until soft. Add the chorizo, mushrooms, red pepper, garlic, thyme, paprika, pepper, oregano, cayenne pepper and salt. Cook for a further 5 minutes
Step 3: Add the chicken along with the rice, tomatoes, stock and lime juice. Cover with a lid and leave to simmer for around 25 minutes or until the rice is tender.
