When the sun comes out, many people just rush to the supermarket and buy a packet of burgers and sausages which ends up making it all quite unhealthy. Why not get prepared and have a healthy BBQ? Making your own food for the BBQ is not only much tastier, it is also cheaper and much healthier. This healthy BBQ recipe for chicken skewers is nice and light for those really hot days and is also quick and easy if you want to get the kids involved.
Ingredients
- 2 Chicken Breasts, chopped
- 2 Spring Onions, chopped
- Equal parts cous cous to boiling water (I used 1 cup of each)
- 1 Red Pepper, chopped into cubes
- 1 Yellow Pepper, chopped into cubes
- 1 Large Red Onion, Chopped into large chunks
- Fresh Pineapple, Chopped into cubes
- Mushrooms
- 1 Tsp cumin
- 2 Tsp Paprika
- Fresh Salad Leaves to serve
Method
Step 1: Place the chunks of chicken breast in a bag and add 1 tsp of paprika a 1 tsp cumin rub to coat. Set aside
Step 2: In a bowl, add the cous cous then cover with equal parts of boiling water (e.g. 1 cup of cous cous to 1 cup of water), leave to soak for 5 minutes. Add the spring onion and paprika, mix well, then set aside.
Step 3: With the chicken and remaining ingredients (feel free to use others if you want) carefully thread them onto skewers.
Step 4: Brush the skewers with oil then carefully place on a hot BBQ and cook for around 15-20 minutes or until the chicken is browned and cooked through. Turn frequently to avoid them sticking. BE CAREFUL WHEN REMOVING AS THE SKEWERS WILL BE VERY HOT!
Step 5: Spoon some of the cous cous onto a plate with some fresh salad leaves then top with the chicken skewers. Enjoy
