Oaty Banana Pancake
A delicious breakfast option or fantastic as a recovery snack following exercise, this oaty banana pancake recipe will also give you around 29g of protein making it an ideal option for those looking to increase their protein intake.
Ingredients
- 2 medium sizes ripe bananas
- 2 eggs
- 90g oats
- 1/2 tsp baking powder
- 2 tsp skyr
- Blueberries & raspberries to serve
Method
Step 1: Add the banana, oats and eggs to a food processor and blend until it forms a smooth batter.
Step 2: Leave to stand for 10 minutes
Step 3: Lightly oil a small frying pan and heat on a medium/high hob. Add 2 tbsp. of the batter to pan.
Step 4: Once it starts to bubble flip and cook on the other side, being careful not to allow to burn.
Step 5: Repeat the process until the batter is used up.
Step 6: Spoon over the Skyr and sprinkle with berries.
