Avocado, Poached Egg and Tomato on Wholemeal Toast
It is important to remember to include healthy sources of fat in your diet as it is essential for many functions in the body including the absorption of a number of vitamins. This avocado recipe will provide you with a great source of good fat and is a deliciously simple option for breakfast or lunch.
- 1 Small Avocado, halved and stoned
- 6 Cherry Tomatoes, Halved
- Handful Salad Leaves
- 2 Fresh Eggs
- 1 Slice Wholemeal Toast
- Black Pepper to serve
Step 1: Heat a pan of water until a simmer then gently add the 2 eggs and leave to poach for around 3 minutes or until cooked to your liking. Meanwhile, add the bread to the toaster to be ready for your eggs finishing.
Step 2: Heat a splash of olive oil in a small frying pan and add the tomatoes, cut side down and leave to cook alongside the eggs and toast.
Step 3: Lightly butter the toast, and drain the poached eggs. Scoop out the avocado, place on the toast and mash with a fork. Top with the eggs and serve with salad leaves and cooked tomatoes. Sprinkle with black pepper to serve.
