Prawn, Mango and Avocado Salad
Preparing a healthy lunch doesn’t have to take a long time. This super easy recipe takes about 5 minutes and can be prepared in batches and stored in the fridge for the following few days.
- 60g cooked prawns
- 1/2 Avocado
- Handful Lettuce Leaves (can use spinach or rocket if you prefer)
- 1/2 Mango, cubed
- 4 cherry tomatoes, halved
- Juice of 1/2 a lime
- Lime wedges to garnish
Step 1: Add all ingredients to a bowl and toss well. Store in an airtight container in the fridge until ready to eat.
Step 2: Try drizzling with a bit of sweet chilli sauce or to add a some chopped chillies to give it a bit of a kick
- Frozen, cooked prawns are a super easy way of getting prepared to make this meal. Simply put in a tub in the fridge the night before then you have the prawns ready for lunch without any cooking required.
