Banana & Oat Pancakes
A delicious breakfast option or as a recovery snack following exercise, this will also give you around 29g of protein making it an ideal option for those looking to increase their protein intake
- 2 medium sizes ripe bananas
- 2 eggs
- 90g oats
- 1/2 tsp baking powder
- 2 tsp skyr
- Blueberries & raspberries to serve
Step 1: Add the banana, oats and eggs to a food processor and blend until it forms a smooth batter.
Step 2: Leave to stand for 10 minutes
Step 3: Lightly oil a small frying pan and heat on a medium/high hob. Add 2 tbsp. of the batter to pan.
Step 4: Once it starts to bubble flip and cook on the other side, being careful not to allow to burn.
Step 5: Repeat the process until the batter is used up.
Step 6: Spoon over the Skyr and sprinkle with berries.
